How to Store Living Fizz (and Open It Safely)
Live cultures keep working in the bottle. Here is how to keep yours happy and avoid a fountain.
Our ginger fizz is, quite literally, alive. Inside that sealed bottle the cultures keep slowly working, and that is a feature, not a flaw, because it is exactly what keeps the flavour bright and evolving. But a living drink behaves differently from a dead one in a can, so a handful of simple habits will keep every bottle perfect (and keep you from wearing it).
Why storage matters more than for normal soda
A regular soda is force-carbonated and biologically inert: the bubbles are pumped in and nothing changes after bottling. Our fizz makes its own carbonation through fermentation, and the microbes responsible are still present. Give them warmth and the remaining sugar, and they get back to work, producing more CO₂ and building pressure. Understanding that one fact explains every rule below.
Keep it cold
Cold is the off-switch. Yeast activity drops dramatically near refrigerator temperatures, so the fridge essentially puts the ferment on pause. Store living GingerBros in the fridge from the moment it arrives, and keep it there until you drink it. Leave it somewhere warm and the cultures wake up, eat more sugar, and steadily raise the internal pressure, which affects both taste and how lively the bottle is when you open it.
Open it slowly
Always open a well-chilled bottle (cold liquid holds onto dissolved CO₂, so it is far calmer). Crack the cap slowly and let the pressure escape in stages, you want a series of gentle hisses, not one big release. If a bottle has been sitting out and warmed up, chill it for several hours first, and the very first time, open it over the sink just in case.
Drink it fresh
- Best enjoyed within the date on the bottle, while flavour and fizz are at their peak.
- Once opened, reseal and refrigerate; it will gradually lose carbonation over a day or two, like any live soda.
- A little cloudiness or sediment at the bottom is completely normal, that is the living culture settling out, not spoilage. Tilt the bottle gently to rouse it rather than shaking it hard.
Reading your bottle
A healthy bottle smells sharp, gingery and clean, and pours with a lively fizz. Trust your senses: if something ever smells genuinely off or the bottle seems wildly over-pressurised from heat exposure, do not chance it. With proper cold storage, that essentially never happens.
A quick safety note
Never store living fizz in a warm car, on a sunny windowsill, or in the freezer. Heat builds pressure; freezing expands the liquid and can crack the glass. The fridge is the only home it wants.
Treat it like fresh food, not a canned drink, and it will reward you with bright, lively flavour every single time.
